Broccoli, Grape, and Cucumber Salad
Serves: 6 servings
2 medium heads of broccoli, finely chopped/ diced
1/2 English cucumber, diced
1 cup red/purple grapes, chopped
3 Tbsp. onion, finely chopped
2 to 3 Tbsp. unsalted sunflower seeds
1/2 cup plain Greek yogurt
1 Tbsp. lemon juice
1/4 tsp pepper
1. In a medium bowl, stir together chopped broccoli, diced cucumber, chopped grapes, diced onion and sunflower seeds.
2. In a separate bowl, combine ½ cup of yogurt, 1 Tbsp. lemon juice, ¼ tsp pepper and mix well.
3. Mix the dressing into the salad & Serve.
