4 lb. Beef Tenderloin roast

2 tsp salt

2 tsp ground pepper

1 tsp dried thyme

1 tsp garlic powder

1 tbsp olive oil


(1) Four hours (or more) you plan on cooking the roast, prepare rub mixing salt, pepper, thyme, and garlic in small bowl. Coat beef tenderloin with spice mixture, then wrap in plastic wrap. Refrigerate until ready. (2) Preheat oven to 450°F. Unwrap roast and place on a rack in small roasting pan or baking sheet with sides. Drizzle olive oil over the roast. (3) Place roast in the oven for 15 minutes, then reduce heat to 325°F. (4) Continue cooking tenderloin to degree of doneness that is desire. For medium-rare, consider cooking for 25 minutes until internal temperature of 125°F. (5) Remove roast from oven when done and tent with foil. Allow to sit for 10-15 minutes before carving.
