French Onion Stuffed Pork Loin

Ingredients:

Onions:

  • 3 tbsp butter
  • 2 yellow onions, sliced
  • ½ c beef broth

Pork Loin:

  • 3 lb pork loin
  • 2 tbsp olive oil
  • 1 tsp salt
  • ¼ tsp pepper
  • 1 tsp Italian seasoning

2 c shredded gruyere cheese

Instructions:

(1) Preheat the oven to 450°F. (2) In a large skillet over medium heat, melt butter. Add onions and beef broth and cook until onions are brown and tender. (3) Cut the pork loin in half, lengthwise, leaving 1 inch on the opposite end (do not cut all the way through). (4) Open pork loin like book and cut opposite from the first cut, leaving 1 inch again. Cover entire cut of meat with plastic wrap and pound to an even 1/3-inch thickness. (5) In small bowl, combine oil, salt, pepper, and Italian seasoning. Rub over both sides of the meat. (6) Top the pork loin with half of the onions and half of the cheese. (7) Tightly roll the pork loin; secure with cooking twine. (8) In same skillet over medium, add pork loin to pan and cook for 5 minutes on each side, four times total. (9) Transfer skillet to oven and cook for 25-30 minutes. Increase oven temperature to broil. Top the pork loin with remaining onions and cheese and cook for 5 minutes or until cheese is melted. Slice and serve.
