Ingredients:
3/4 cup Pecans, finely chopped
2/3 cup Panko Breadcrumbs
1 tsp paprika
1 tsp garlic powder
Salt and black pepper
2 ½ tbsp Dijon mustard
2 ½ tbsp mayonnaise
2 tbsp honey
4 chicken breasts
Instructions:
(1) Preheat oven to 425°F. Line 18×13 inch baking sheet with foil. (2) in a shallow dish, toss together pecans, breadcrumbs, paprika, garlic powder and season with salt and pepper. (3) In a small mixing dish, stir together 1 tbsp mustard, 1 tbsp mayonnaise, and ½ tbsp honey. (4) Pound each chicken breast to be evenly thick. Brush top side of chicken with honey mustard mixture. Transfer to panko mixture, honey mustard side down, and press firm to get mixture to stick. Brush top with honey mustard mixture and turn chicken into panko crumbs and press to coat. Transfer to baking sheet. Repeat with remaining chicken. (5) Bake chicken for 20-25 minutes. (6) In small bowl, mix remaining mustard, mayonnaise, and honey. Drizzle over chicken once chicken is baked.
